This was the cake I made for my son’s 2nd birthday party. And again for his 3rd. He and our adult guests flipped over it. With the whole wheat flour and bananas, you don’t need to feel so guilty about serving something sweet. It is fantastic with or without the frosting.
1 1/2 cups unbleached flour 1 stick butter, softened
1/2 cup whole wheat flour 1 cup sugar
1 tsp baking soda 2 eggs
1/2 tsp salt 2 tsp vanilla
1/2 tsp cinnamon 2 ripe bananas (mashed)
1 cup buttermilk
Preheat oven to 350° Combine flours through cinnamon. Set aside. In a large bowl, cream butter with sugar. Add eggs, vanilla, bananas. Add flours, then buttermilk. Pour into 9 x 13 pan. Bake 30 minutes.
Optional Cake Icing Recipe:
1 stick butter
1 tsp vanilla
1/2 cup milk
1 bag powdered sugar
Let cake cool before icing. In small saucepan, melt butter with vanilla over low heat. Add in milk. Gradually add in sugar with mixer or immersion blender and blend until smooth. Pour over cake and let cool. Note: this recipe makes a lot of icing- you may not need all of it.
