Broccoli Cauliflower Soup

We had this broccoli and cauliflower soup tonight.  Hayden asked for seconds, and thirds, and then turned down his grilled cheese sandwich.  I can’t complain!

1 head cauliflower, cut into florets
1 bunch broccoli, cut into florets
1/2 yellow onion, chopped
2 cloves garlic, minced
3 tbs olive oil
1 cup chicken broth
3 cups shredded cheddar cheese
1/2 tsp salt
milk or half & half

Cook cauliflower and broccoli until tender.  Set aside, reserving cooking liquid.  In a large pot, heat olive oil over low-medium heat.  Add onion and garlic, cook until tender.  Add cheese and stir until melted.  Using a food processor or immersion blender, puree cheese sauce with broccoli, cauliflower, and cooking liquid, gradually adding in chicken broth.  Add salt, then milk to desired consistency (1-2 cups).
