Bacon-Topped Butternut Squash

Mmmm… this is one of those home cooking recipes.  Butternut squash is always good, but add bacon and a hint of pure maple syrup, and you’ve got heaven in a dish.

1-2 butternut squash, peeled, chopped
1/4  cup maple syrup
salt
2 strips bacon

Preheat oven to 375°  In a large skillet, fry bacon until crispy.  Set aside to cool.  Try not to eat bacon while you are cooking.  In a large bowl, toss squash chunks with maple syrup.  Salt very lightly, and transfer to baking dish.  Cover and roast until tender, about 40 minutes.  Uncover and put dish under broiler for another 5 minutes, or until squash just begins to brown.  Crumble bacon, and sprinkle on top of squash.
