Home Cooking Recipes: Comforting Potato Soup

When the cool, cloudy weather returned, I pulled some of this soup out of the freezer.  I was just as delicious as I remembered.  This soup is actually the only way I can get Hayden to eat potatoes!

2 1/2  lbs potatoes, any kind (peeled & chopped- approx 6 Russets or 8 large Yukons)
1 quart chicken or veggie broth
3 strips bacon
2 leeks (white only, finely chopped)
1 small yellow onion (finely chopped)
1 clove garlic (crushed or minced)
2 tbs olive oil
half and half or milk
salt, pepper

In large stockpot, fry bacon until crispy. Set aside to cool.  In same pot, add oil, leeks, onions, potatoes.  Saute until glossy.  Add chicken broth, simmer 20 minutes or until soft.  Puree in batches or use immersion blender.  Turn off heat;  add half and half to desired consistency.  Salt and pepper to taste .  Serve topped with bacon crumbles.

    how many people does this recipe serve? We have family in town and I’d love to make this. I need to know if I should double the recipe. Thanks!



    It should serve 6-8 people. Since we are a family of 3, we had plenty left over.
