Olive Tapenade
I was craving a salty snack but feeling lazy, so I bought some jarred olive tapenade form a fancy grocer that will go unnamed. I was soooo disappointed. It was almost flavorless, and not very salty. Should have brought out the mini-Cuisinart and made my recipe:
1 tbs olive oil
1 cup chopped onion
2 tsp fresh thyme
2 cloves garlic, crushed or minced
1/4 cup dry white wine
2 tbs white wine vinegar
2 cups mixed pitted olives
1/4 tsp black pepper
In a medium skillet, heat oil and add onion, garlic and thyme. Cook 2-3 minutes. Add wine and vinegar, then simmer to reduce in half. Pulse with olives and pepper in food processor until well blended. Serve with crackers or pita chips.
