Quick Family Recipes: Easy Bowties with Sauce
I wasn’t able to get a picture of this dish because Hayden was eating it up so quickly! As soon as I gave seconds, he was asking, “Can I have some more pasta, please, Mommy?” Oh, if only every meal went over this well!
2 cloves garlic, crushed or minced
1 tbs olive oil
1 can diced tomatoes
1 tbs balsamic vinegar
1 tsp sugar
1/2 tsp salt
3 tbs milk or creme
1 bag bowtie pasta
1/2 cup crumbled feta
1/4 cup toasted pine nuts
In small saucepan, heat oil and garlic. Cook over low heat about 1 minute. Add tomatoes through salt, stir, and simmer (low) for 15-20 minutes. While simmering, toast your pine nuts and cook your pasta (about 2/3 of the bag). Drain pasta, then pour back into cooking pot and set aside. Using an immersion blender or food processor, pulse sauce until smooth. Stir in milk (I used 1% milk). Pour sauce over pasta and stir to coat. Serve topped with feta and pine nuts.
