Quick Family Recipes: Smoked Crab Quesadillas
Crab meat is so delicious (and nutritious!), and every time I make something with it, Hayden ends up eating big chunks of it right out of the pan. These quesadillas made me feel like I was in Cabo, sans the margarita. I’ll have to say, though, my Frontier Red (lot 81) complemented the smokey flavor nicely.
3/4 lb fresh crab, picked and shell fragments removed*
1 small yellow onion, chopped
1 red bell pepper, chopped
2 tbs canola oil
1 bag shredded smoked cheddar or gouda blend**
12 corn tortillas
canola spray or butter
In a large skillet, heat oil over medium heat. Add onion and bell pepper, cook until just tender. Add crab meat, stir another 2-3 minutes. Salt lightly, and remove from heat. Using a griddle or large skillet or cook outside on the grill, lightly spray with canola and assemble quesadillas using corn tortillas, shredded cheese, and a spoonful of crab mixture. Cook until lightly browned on both sides. Delicious served with a smokey hot sauce like Tapatío or Tabasco Chipotle sauce.
* In LA, I am able to get great fresh Dungeness crab, already prepared. You should be able to get either fresh crab or lump crab at your local fishmonger or grocer.
**I found a great blend of smoked gouda, cheddar, and provolone at Trader Joe’s.
