Easy Family Recipes: Pizza Pizza!
Oh, how we love thee, pizza! Some days, there’s nothing better than ordering pizza for dinner, your favorite combination, with a glass of red wine… But, of course, we are supposed to be making dinner, right? When I have run out of ideas, I make pizza. I keep a package of crusts in the freezer and use up whatever is in the fridge, like when I make Power Pizza. Here are more ideas for a fun, satisfying dinner.
Veggie Pizza with Asparagus
1 pizza crust
1/2 cup jarred pizza or pasta sauce
3 cups shredded mozzarella cheese
1 cup chopped asparagus
1 cup chopped red bell pepper
1/3 cup finely sliced red onion
1 clove garlic, crushed or minced
1 tbs olive oil
salt
Preheat oven to 450° In a skillet, heat olive oil on low-medium heat. Add asparagus, bell pepper, and garlic- cook until just tender, about 2-3 minutes, then set aside. Place pizza crust on baking sheet or pizza stone, and layer it up: sauce, half of the cheese, sauteed veggies, onion, light salt, remaining cheese. Bake about 10 minutes, cooking pizza until crispy and bubbling.
Pepperoni Pizza
1 pizza crust
1/2 cup jarred pizza or pasta sauce
2 cups shredded mozzarella cheese
1/4 cup parmesan cheese
1/2 package pepperonis (look for nitrate-free)
Preheat oven to 450° Place pizza crust on baking sheet or pizza stone, and layer it up: sauce, half of the mozzarella cheese, pepperonis, remaining cheeses. Bake about 10 minutes, cooking pizza until crispy and bubbling.
Personal Pizzas
3 whole English muffins, split in half
1/2 cup jarred pizza or pasta sauce
2 cups shredded mozzarella or cheddar cheese
1/2 package pepperonis (look for nitrate-free), chopped
1 cup finely chopped swiss chard leaves
1/4 cup finely chopped onion
garlic salt
1 tbs olive oil
Preheat oven to 450° Place English muffins crust on baking sheet or pizza stone, and layer them up. For the veggies, layer in this order: cheese, sauce, cheese, light garlic salt, onion, chard, drizzle olive oil, top with cheese. For the pepperonis: cheese, sauce, cheese, chopped pepperonis, top with cheese. Bake about 10 minutes, cooking pizza until crispy and bubbling.
omgahhhhh. that pepp and those personal pizzas are calling me name. this is some wicked late night snack jedi mind game, isn’t it!

I get a pack of 2 at Whole Foods- they have regular and whole wheat (the regular is a little lighter in texture). I have also bought the Alvarado Street crusts, but they cost more and are a little bready. I’ve used pizza dough before (both homemade and Trader Joe’s)- for me, that’s more trouble than it’s worth.
