Spring is here, and summer is right around the corner, which means loads of fresh, tomatoes. Often, people don’t know how to cook tomatoes and just eat them raw. This tomato dish can be used for anything- serve on top of pasta, fish or steak, or as an accompaniment to your main course. Serve as bruschetta with crusty bread or crackers. The best part- it only takes 5 minutes, or less, to prepare.
1 pint cherry or grape tomatoes, halved or quartered
1 clove garlic, crushed or minced
1 tbs olive oil
splash white balsamic vinegar
1 tbs freshly chopped herbs*
In a small saucepan, heat oil and garlic over low heat. Add tomatoes, and stir to heat through. Add white balsamic vinegar (no more than a teaspoon), and stir for 1 minute. Lightly salt and pepper. Stir in fresh herbs and serve immediately.
* Such as basil, oregano, or rosemary.
