Electric Beet Hummus
It’s beet season, again. Ugh. I have no problem with beets, but The Boys won’t eat ’em. Unless… I create this yummy, electric pink beet hummus. It’s not every day that you get to enjoy something this colorful that didn’t come from a candy machine! Serve with crackers or pita chips.
3 beets, trimmed, roasted, peeled, cut into bites
1 can white beans (cannelini or northern)
3 tbs olive oil
2 cloves garlic, crushed or minced
2 tbs lemon juice
3/4 tsp salt
1/2 tsp cumin
In a small skillet, heat olive oil over low heat. Add garlic and cook 1 minute until just softened- do not let it brown. Combine all ingredients in a food processor and pulse until ultra smooth.
