Tomato Basil Grilled Cheese

Hayden and I eat almond or peanut butter sandwiches for lunch 364 days a year, but this sandwich was a close second.  It tasted so fresh and would make a great lunch or dinner!

4 slices bread
4 slices white cheddar or provolone cheese
1 tomato, thinly sliced
1 handful basil leaves, coarsely chopped
salt
pepper
butter or olive oil

Lightly butter bread or brush with olive oil.  Layer up sandwiches with: bread, cheese, tomato, salt, pepper, basil, cheese, bread.  Grill on both sides until lightly browned and cheese is melted.  Makes two sandwiches.
