Summertime Series: Beer Baked Beans
Oh, you suckers. Every time I mention beer or bourbon ya’ll are chomping at the bit to get a look at the recipe. You’re in luck- this one DOES have beer in it. You will still have to drink some if you want to get loopy. And did I mention how good these beans are? Every time I make these people gobble them up.
4 cans pinto or northern beans, drained and rinsed
2 cups water
1 can chicken broth
2 bay leaves
1 medium onion, chopped
2 slices bacon, chopped
2 cloves garlic, crushed or minced
3/4 cup ketchup
1/3 cup brown sugar, packed
3 tbs dijon mustard
2 tbs worcestershire sauce
1 tsp chili powder
1/4 tsp black pepper
1 bottle amber beer
Preheat oven to 300º In a large pot, combine beans through bay leaves. Bring to boil, simmer 15 minutes. Drain, reserving 1 cup cooking liquid. Discard bay leaves. Heat bacon and onion over medium heat and cook until onions are super tender. Add garlic through black pepper, then beans, beer, and 1 cup cooking liquid. Bring to boil and simmer 10 minutes. Pour into deep baking dish, cover, and cook 45 minutes.
