Summertime Series: Less-Guilt Chocolate Chip Cookies
For those who are looking for an easy, crowd-pleasing dessert for today’s feast, here is your recipe. And the best part? These cookies are made without butter and egg yolks, making them a great choice for those watching their cholesterol intake.
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
4 tbs canola oil
2 1/2 tbs brown rice syrup
3/4 cup brown sugar
1/2 cup sugar
1 1/2 tsp vanilla
3 egg whites
1 cup chocolate chips
Combine flour through salt and set aside. In a large bowl, beat oil with rice syrup and sugars. Add egg whites, then vanilla. Add flour mixture and fold in chocolate chips. Preheat oven to 375º and refrigerate dough for 1 hour. Remove dough from refrigerator and form into balls for cookies (dough will be sticky due to lack of animal fat). Bake 12-14 minutes (depending upon how big you make your cookies!). Double recipe for a large group.
