Summertime Series: Grilled Salmon “Caesar”
I do not get to eat enough salad. Hayden won’t eat it, and since I try my hardest to make one meal for everyone, I have been missing out. The great part about this salad is the salmon, which Hayden loves. I just serve his without the salad and offer him a little dressing on the side, for dipping. Served with some garlic-cheese toasts and chardonnay, this makes a great summertime dinner.
1 tbs olive oil
2 cloves garlic, crushed or minced
1/2 cup plain yogurt
1/2 cup grated Parmesan
2 tbs dijon
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp worchestershire
juice from 1/2 lemon
8 cups torn lettuce
1 medium tomato, diced
2 cup croutons
grilled salmon fillets* cut or flaked into bite sized chunks
In a small skillet, soften garlic in oil over low heat. Do not burn. Combine garlic through lemon juice until smooth. Arrange lettuce, tomato, salmon, and croutons on dinner plates. Top with creamy “Caesar” dressing.
*cook over medium-high stove top or grill 3-4 minutes per side, or buy precooked salmon and let warm to room temp before serving.
