Easy Family Recipes: Basic Beef Chili

Yes, I know it has been very hot outside. But something made me want to make a big pot of chili. So I did. And we ate it, with sweaty upper lips. And it was awesome. This is one of those easy family recipes that makes plenty, so you can freeze some for later.  LA is now back to 68º so we’ve been eating this chili for days.  Once the rest of you get  your football weather, this will make a great fall recipe.  (Don’t be haters- our Indian Summer has yet to come).

2 1/2 lb ground beef
1 yellow onion, chopped
1 green bell pepper, chopped
2 cloves garlic, chopped
2 tbs oil
3 cups water
3 tbs flour
1 14 oz can tomato sauce
2 tsp chili powder
2 tsp sugar
2 tsp salt
1 tsp cumin
1/4 tsp black pepper
2 cans kidney beans, rinsed and drained

Heat oil in a large pot over medium heat.  Brown meat with onions, bell peppers, and garlic, breaking meat up into little pieces.  While cooking beef, whisk together flour and water and add to pot.  Add tomato sauce through black pepper.  Bring to low boil then reduce to low simmer and cook, covered, for 1+ hours, stirring occasionally.  Add in beans, simmer another 15 minutes.  Add salt and pepper to taste.  Serve topped with shredded cheese and tortilla chips on the side.  For the grown ups, a garnish of sliced jalepeños or a dash of Cholula sauce make it muy bueno!

    Sounds yummy!! I love chili. I put a splash of Tequila in mine – adds a woody flavored kick to it.

    Can’t wait for it to cool off here! Yum! We love chili, too. If you need a lower fat/cholesterol version substitute the beef for ground turkey thigh, venison or bison. All 3 of these meats make excellent chili!! You may need to add just a little more good oil..these are very lean. In Texas, we use Gebhardt’s chili powder…the best!!!

    fall makes me melancholy. probably because i know the lack of light and full-on seasonal affective disorder of winter is coming. but i’ll be damned if comfort food isn’t a big help. especially chili. i like all chili: beef chili, turkey chili, and that stupid chain restaurant, chili’s.

    still i want to live with you and eat your yummy food. i must think of something that i could offer in trade to earn my keep. i know! i open a franzia box without error and always chill before serving. holla!



    All you need to bring to the table is your charm and wit- but the Franzia would add an element of class that could not be surpassed.
