Holiday Recipes: Pumpkin Mini Muffins

I made these mini muffins for Hayden’s 3rd birthday party, which was at 10 am.  Everybody devoured them, Hayden included (yes, even after he had two pieces of cake).  These sweet, wholesome muffins make a great breakfast or brunch treat, especially during the holidays.  Make a batch and wrap them in gift bags for your co-workers or your children’s teachers.  They’ll love you for it!

2 1/2 cups unbleached flour
1/2 cup whole wheat flour
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
2 cups sugar
2/3 cup canola oil
3 eggs
1 can pumpkin
1/2 cup chopped walnuts
1/2 cup raisins

Preheat oven to 350°  Combine flours through nutmeg.  Set aside.  In a large bowl, beat sugar and oil.  Add eggs, then pumpkin.  Add flours and mix until just moist.  Fold in nuts and raisins.  Spoon into mini muffin pans and bake 16 minutes.  Makes 2 1/2 dozen.
