Holiday Recipes: Butter Cookies

There are sugar cookies.  And then there are good sugar cookies.  And then there are butter cookies.  Need I go on?  I made these for Halloween, but they are an anytime cookie- just change the decorations.  Oh, and yes, everyone loves them, adults and kids alike.  This recipe is for you, Alex.

1/2 pound butter (yes, you read that correctly)
2/3 cup sugar
3 egg yolks
2 tbs cream or half & half
1/2 tsp almond extract
1/2 tsp vanilla extract
2 1/2 cups flour

Preheat oven to 350°  Cream butter and sugar.  Add egg yolks, then almond and vanilla.  Mix in flour.  Dough will be stiff and sticky.  Roll out onto a floured surface (I never use a rolling pin, just pat it out with my hands) and cut cookies into desired shapes.  Bake 12-15 minutes.  Let cookies cool before icing.

Royal Icing

3 cups powdered sugar
4 tsp powdered egg whites (or meringue powder)
1/4 cup water
1/2 tsp vanilla
1 tsp lemon juice

Combine sugar though vanilla in a bowl.  Beat with a mixer on medium-high 3-4 minutes.  Add lemon juice and beat another 2-3 minutes.  Keep covered with a a damp towel or with a secure lid until ready to use- icing will harden quickly.
