Chicken Pot Pie

Put your hungry suit on, because as satisfying as this dish is, you will want to go back for seconds.  Chicken pot pie is the ultimate comfort food.  You will spend a little prep time in the kitchen, but only basic cooking skills are necessary, and the result will be worth your effort.  This easy family recipe makes a large casserole that could feed a crowd and hits the spot on a cold, cloudy day- my three year-old gobbled it up!

3 bone-in chicken breasts
1 bay leaf
4 tbs olive oil
1 large bunch carrots, peeled and chopped
3 russet potatoes, peeled and cubed
1 yellow or white onion, chopped
3 tbs flour
1 can chicken broth
1 tsp salt
black pepper to taste
1/2 cup frozen green peas, thawed
1 recipe pie crust / pastry dough*

Place chicken in a large pan with lid.  Cover with cold water, add bayleaf and a few shakes of salt.  Bring to boil and poach for 25 minutes.  Remove chicken from pot and set aside to cool.  Strain and reserve 3 cups cooking liquid and set aside.  Once chicken has cooled, remove and discard skin.  Pick chicken from bone and shred into bite-sized pieces.  Set aside**

Preheat oven to 350º  In a large pan, heat olive oil over medium-high heat.  Add carrots through onion and cook while stirring, about 10 minutes.  Whisk 3 tbs flour into cooking liquid.  Add liquid to pan.   Add can of chicken broth through peas to pan.  Add chicken, bring to boil, then simmer 10 minutes.  While simmering, prepare pie crust.  Roll out room temp dough into a floured surface.

Pour veggies and chicken into a large casserole dish and top with pie crust.  Bake 1 hour.  Let sit at least 15 minutes before cutting.  Serve with hearty bread or rolls (Mmm… for “mopping” up the juices!).

** Can prepare chicken ahead of time.  Cover and refrigerate until ready to use.

    Funny that you posted this today cause I have a homemade chicken pot pie in the oven right now! I used a premade pie crust and a biscuit topping. I like to pressure cook the chicken before hand in lots of water so I can freeze the extra broth. That way, I never have to buy canned chicken broth!

    This is too amazing…….. we had chicken pot pie last night!!!!! I used the biscuit receipe from Barefoot Contessa. Family Style. It is also great left over.
