Light and Easy Crab
We had a sunny, warmish day today, so I wasn’t in the mood for anything very heavy for dinner. I was also short on time (imagine that), so I needed to fix something quick. Something easy. Something that didn’t involve a lot of beef and cheese. I came up with this crab, which took all of 5 minutes to prepare. I served it on top of some buttery pasta, but I think it would be great served atop of a bowl of soup or a green salad.
1/2 pound fresh crab meat, picked of shell (I used Dungeness crab)
1/3 cup finely chopped onion
1 glove garlic, crushed or minced
1 small tomato, finely chopped
2 tbs olive oil or butter
salt and pepper to taste
Heat oil in a pan over medium-low heat. Add onions and cook 2-3 minutes, stirring to prevent browning. Add garlic, cook another minute. Add crab, stir 1-2 minutes. Add tomato, stir another 1 minute. Add salt and pepper and serve.
