With all the sickness that’s been happening at our house, accompanied by a chilly late-winter rain, I was craving something warming. Something that looks and tastes impressive but doesn’t require much effort. All-Day Quiche is just that. An easy family recipe you can make on a weeknight that is also good enough to serve to brunch guests. It tastes good all day long, breakfast through dinner.
1 recipe regular pie crust
1 1/2 cups milk or cream
1/2 tsp salt
1 small yellow onion, thinly sliced
1 tbs olive oil
1 tbs butter
1 small bag baby spinach
1 1/2 cups shredded cheese (cheddar or swiss)
Preheat oven to 375° Prepare pie crust and press into a greased deep pie dish. Set aside. Heat oil and butter in a skillet over low-medium heat. Add onions and cook until tender. Spoon onions into pie crust. Add spinach to skillet and cook until wilted (cook down by half). Add spinach to pie dish. Top with shredded cheese. Whisk together eggs through salt and pour into dish. Bake for 45 minutes. Let quiche sit 10 minutes before slicing.
