Apricot Glazed Chicken

I made it back to the kitchen.  As it turns out, time away really does pay off.  After eating frozen pizzas and grilled cheese sandwiches for a week, I started craving some real food.  Then I dug in the pantry and the freezer to see what I had on hand, and voilà!  Apricot Glazed Chicken!  Oh, and it’s as good as it looks, too.

2 whole bone-in chicken breasts (or 4 halves)
1/2 cup apricot preserves
1/4 cup honey
3 cloves garlic, crushed or minced
2 tbs brown sugar
2 tsp hoisin sauce
2 tsp soy sauce
2 tsp orange zest
1/2 tsp ground ginger

Preheat oven to 350º  Combine honey through ginger and set aside.  Remove skin from chicken and place chicken in a baking dish.  Lightly salt chicken, then pour apricot glaze over chicken.  Bake for 40 minutes, then baste and place under broiler for another 3-5 minutes*.

* This could also be cooked on an outdoor grill.

    note to self: do not visit the sweetest on a friday at 5 when you’re starving for real food because you too eat grilled cheese and pizza all week. yummmmmmmmmm!
