Shaved Brussels Sprouts With Bacon

We’ve been getting some cloudy, cool weather that reminds me of fall.  Don’t worry, it will be back into the nineties in August.  And in September.  But for now, we are enjoying the chill in the air.

This kind of weather makes me want to eat warm veggies and comfort food.  Like brussels sprouts!  They are a favorite in our house, and although they are really a fall vegetable, we’ve seen a late spring crop of the cutest baby sprouts.

Which are really more like gumball-sized cabbages.

So why are they called sprouts?

I don’t know.  But they are awesome, especially when cooked with a little bacon and served atop a bed of warm pasta.

Shaved Brussels Sprouts With Bacon

1 lb pasta, any shape
2-3 lb brussels sprouts, trimmed and thinly sliced
4 strips bacon, chopped
2 cloves garlic, crushed or minced
2 tbs olive oil, divided
shredded parmesan cheese

Cook pasta according to package directions.  Drain, toss with 1 tbs olive oil.  Lightly salt and cover with lid to keep warm.  Set aside.  In a deep skillet, fry bacon until almost crispy.  Add brussels sprouts, garlic, and remaining tbs of olive oil and cook until tender, about 6-7 minutes.  Salt and pepper to taste and serve on bed of pasta.  Top with shredded parmesan.
