It’s Hot. Bring On the Berries and Booze.

In honor of the hottest day of the year (so far) and in defeating the tiny blog hackers (they must have me confused with someone more important) I am back on the blog, writing about food.  Because I am hungry.

Today, my five year-old and I shared our first running experience.  It was really hot.  Like, hot.  Hayden had plenty of energy at the finish line, enough to hit the bouncy house and kids zone hoola-hoops.  I, on the other hand, am suffering a wee bit.  Arnica, please.

During the race I was so thirsty, and all I could think about was fruit.  So this gorgeous Berry and Basil Salad might be in order.  It is full of antioxidants and looks beautiful in a serving dish.  Plus, it has booze in it.  Serve it as a dessert or along with some cold savignon blanc.

Berry and Basil Salad

1/4 cup wild honey
2 tbs Cointreau
1 lime
1/4 tsp vanilla extract
2 pints Earthbound Farms strawberries
1 pint Earthbound Farms blueberries
1 cup sliced basil
1/2 cup chopped pecans
freshly cracked black pepper
1 pint Stonyfield Greek yogurt (either plain or vanilla)

Whisk together honey through vanilla and set aside.   Remove hulls from strawberries and slice berries.  Combine strawberries and blueberries in a bowl.  Toss with dressing.  Transfer to a serving dish and top with basil and freshly cracked black pepper to taste.  Sprinkle with chopped pecans and serve with a dollop of yogurt.

    Yum! I will be making this soon!!!! It was 108 in Houston on sat, June 29!!!! was awful!!!!
