Holiday Recipes: Spiced Pumpkin Bread
After trying many pumpkin bread recipes, I created this one, and it is awesome. This recipe makes two loaves. Enjoy one now, and freeze one for a rainy day!
2 1/2 cups unbleached flour
1/2 cup whole wheat flour
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
2 cups sugar
2/3 cup canola oil
3 eggs
1 can pumpkin
1/2 cup raisins
Preheat oven to 350° Combine flours through nutmeg. Set aside. In a large bowl, beat sugar and oil. Add eggs, then pumpkin. Add flours and mix until just moist. Fold in raisins. Pour into 2 standard loaf pans. Bake 55 minutes.
