Sunrise Coffee Cake

Feature Recipe: Although I have a lot of them, I don’t use cookbooks often.  That said, each of my books offers a few recipes that I keep going back to because they are good.  This is one of those recipes.  It’s by Marie Saba.  Info about her book and cooking show can be found here.

Sunrise Coffee Cake

1 1/2 cups flour
3/4 cup sugar
1 1/2 tsp baking powder
3/4 tsp salt
1/4 cup canola oil
3/4 cup milk
1 egg
2 tsp vanilla extract
1 tsp almond extract

For the topping:

1/2 cup packed brown sugar
1/4 cup flour
1 tsp cinnamon
3 tbs cold unsalted butter

Preheat oven to 375°  In large bowl, combine flour through salt.  Add oil, milk, eggs, and extracts.  Beat on high for 1 minute.  Pour into 9 inch cake pan and set aside.  Using a food processor, combine topping ingredients until crumbly.  Sprinkle over batter in pan.  Bake 25-30 minutes.  Let cool 10 minutes before slicing.
