Sunrise Coffee Cake

Feature Recipe: Although I have a lot of them, I don’t use cookbooks often.  That said, each of my books offers a few recipes that I keep going back to because they are good.  This is one of those recipes.  It’s by Marie Saba [1].  Info about her book and cooking show can be found here [1].

Sunrise Coffee Cake

1 1/2 cups flour
3/4 cup sugar
1 1/2 tsp baking powder
3/4 tsp salt
1/4 cup canola oil
3/4 cup milk
1 egg
2 tsp vanilla extract
1 tsp almond extract

For the topping:

1/2 cup packed brown sugar
1/4 cup flour
1 tsp cinnamon
3 tbs cold unsalted butter

Preheat oven to 375°  In large bowl, combine flour through salt.  Add oil, milk, eggs, and extracts.  Beat on high for 1 minute.  Pour into 9 inch cake pan and set aside.  Using a food processor, combine topping ingredients until crumbly.  Sprinkle over batter in pan.  Bake 25-30 minutes.  Let cool 10 minutes before slicing.
